It’s very hard to find someone who can resist it. Giving in to the aroma rising from the grill is to deepen one’s intolerance toward vegetarians and the entire anti-meat family.

Its charms cut across every social layer imaginable, the kind a most rigorous sociologist could attempt to define. Hearing the prick of the fork as it tests the sausage’s doneness on the grill can be likened (at least for some, especially the premature ones) to an explosive release: the juices it releases and their hiss as they fall onto the embers delight the ears and fuel the anxious craving to bring those fifteen centimeters of sausage to the mouth.

Watching, smelling, and listening to a chorizo on the grill is a pleasurable experience no one should miss in this lifetime. And, of course, the next step is to savor it with the sense of taste at its peak. The first bite of the “chori”, the moment it enters the mouth and touches the palate, justifies being alive for another day. All of these sensations multiply when life kisses you on the lips with its “choripan” mouth.
